Chocolate Pie

Category: Mountains

Scald in a double boiler:
2 1/2 cups milk

Cut up and add:
2 oz unsweetened chocolate

In a separate bowl, mix until smooth:
1/3 cup flour
1/4 cup milk

Add:
1/4 tsp salt
1 cup sugar
Add to the mixture in double boiler. Cook and stir over (not in) hot water until mixture is thick. This will take a little while.
Pour a small quantity of this hot mixture over:
4 egg yolks, beaten
Beat and add to mixture in double boiler. Stir and cook the custard for 3 additional minutes.

Add:
2 Tbsp butter

Remove from heat. Beat gently until very smooth.

Add:
1 tsp vanilla
Cool this mixture. Pour it into pie shells, baked. Cover with meringue.
