Strawberry Topping for cheesecake

Makes 1 large steam table pan

2 1/2 gallon frozen strawberries (8 1/2 lbs)
2/3 cup cornstarch
1/2 cup lemon juice
1/2 cup sugar

Drain most of juice from berries. Mix the sugar and cornstarch thoroughly and slowly mix some of the berry juice with the sugar mixture, forming a thin lump free liquid. Mix all the juice and cook the mixture in thick pot until it thickens and is transparent. Remove from heat and add the lemon juice and strawberries. Spread over cheese cake and chill.
