Carrot cake

Blend together:
12 eggs
6 cups sugar
4 1/2 cup oil

Sift the flour and then measure and sift together:
6 cups flour
3 tsp baking soda
3/4 tsp salt
3 tsp cinnamon
3 tsp baking powder
Add the flour mixture to egg mixture.

Grate and add to above mixture:
6 cups carrot

Bake in 2 long steam table pans at 375 F for 30-40 minutes or until tastes done. Cool.

ICING:
3 (8 oz) pkgs cream cheese
1 1/2 cup butter, softened

Add and blend thoroughly:
3 boxes powdered sugar
3 tsp vanilla
3 cups chopped pecans

Family size would be 1/2 of this recipe.
