Fruit Cocktail Cake

CAKE BATTER:
7 cups sifted flour
8 eggs
8 cups sugar
8 tsp baking soda
4 tsp salt
4 lbs fruit cocktail (juice too)

Mix batter with juice, then add fruit. Bake at 350 F for 30-45 minutes. It will be dark in color soon after going into oven and will be done on top before it is done in the middle. Bake in inch large steam table pan.

ICING:
3/4 lb butter
4 cups evaporated milk
4 cups brown sugar
4 tsp vanilla

Blend together and boil 10 minutes. Pour over cake while it is still hot.

For a family size use 1/2 this recipe.
