Family size Apple pecan cake

5/8 cup shortening
1 1/4 cup sugar
5/8 cup brown sugar
3 eggs
3 cups sifted flour
2 1/2 tsp baking powder
5/16 tsp baking soda
5/8 tsp salt
1 1/4 cup pared, chopped apples
1 1/4 cup milk
1 1/4 tsp vanilla
5/8 cup pecan halves

Preheat oven to 350 F. Grease 9x12 inch pan. Cream shortening and sugars; add the beaten eggs. Sift the flour (which should be sifted at the time it is measured) with the baking powder, baking soda and salt; fold into the creamed mixture alternately with milk, beginning and ending with the flour mixture. Add vanilla and fold in chopped apples. Pour mixture into 9x12 inch pan and sprinkle with pecans and a little more brown sugar. Bake until a knife inserted in center comes out clean. Do not overbake. Serve on individual cake plates with whipped cream.
