Meatball Bake

Serves 6

1 lb lean ground pork
6 oz frozen pork sausage meat, thawed
1/2 cup fine dry bread crumbs
2 tsp cooking oil
2 cups chopped fresh white mushrooms
1 cup diced onion
1/2 cup diced green or red pepper
2 cups water
10 oz can of condensed cream of mushroom soup
1/2 cup milk
2 cups instant rice
1/2 cup grated medium cheddar cheese
1/2 tsp salt
1/8 tsp pepper
1/2 cup grated medium cheddar cheese

Combine ground pork, sausage and bread crumbs in a large bowl. Roll into 1 inch balls. Arrange in single layer in greased baking sheet with sides. Bake in 400 F oven for 10 minutes. Transfer to paper towels to drain. Makes about 4 1/2 dozen meatballs.
Heat cooking oil in a large frying pan on medium. Add mushrooms, onion and green pepper. Cook for 5-10 minutes, stirring often, until onion is softened.
Combine water, soup and milk in separate large bowl.
Add onion mixture and next 4 ingredients. Stir well. Spread evenly in greased 2 1/2 quart casserole. Arrange meatballs in single layer on top of rice mixture.
Sprinkle with second amount of cheese. Bake in 350 F oven for 45 minutes. Remove cover. Bake for another 10-15 minutes until cheese is golden.
