Tomato basil pie

1 Tbsp hard margarine
1 cup chopped green pepper
1 cup chopped onion
1 unbaked 9 inch pie shell
3 large eggs
1/2 cup mayonnaise (not salad dressing)
1 Tbsp all purpose flour
1/2 tsp salt
1/2 tsp pepper
1/2 cup fine dry bread crumbs
3 Tbsp finely shredded basil
2 medium tomatoes, cut into 1/4 inch slices
4 oz Swiss or Monterey Jack cheese , sliced and cut into wide strips

Melt margarine in medium frying pan on medium high. Add green pepper and onion. Cook for 5-10 minutes, stirring often, until onion is softened. Cool slightly. Spread evenly in pie shell.
Beat next 5 ingredients in medium bowl until smooth. Pour over onion mixture. Spread evenly.
Sprinkle with bread crumbs and basil. Bake on bottom rack in 350 F oven for about 30 minutes until starting to set. Remove from oven.
Layer tomato slices alternately with cheese strips, slightly overlapping, on top of pie. Bake for another 25 minutes until pastry is golden and cheese is melted. Let stand on wire rack for 10 minutes. Cuts into 8 wedges.
