Hash Brown skillet

Category: potluck

1/2 tsp cooking oil
13 oz package of frozen sausage meat, thawed
2 Tbsp hard margarine (or butter)
4 cups frozen hash brown potatoes
1/2 cup grated carrot
1/2 cup chopped onion
1/4 cup diced green pepper
1 Tbsp finely diced pickled pepper rings
1 Tbsp water
3/4 tsp salt
1/4 tsp pepper
6 large eggs
1 cup grated medium cheddar cheese

Heat cooking oil in large frying pan on medium. Add sausage. Scramble fry for about 5 minutes until no longer pink. Transfer with slotted spoon to large bowl. Discard drippings.
Melt margarine in same large frying pan on medium low. Add nest 8 ingredients. Stir. Cover for 15-20 minutes, stirring often, until vegetables are tender and stirring to brown. Spread evenly in pan.
Beat eggs in a small bowl until frothy. Pour over potato mixture. Scatter sausage over egg. Sprinkle with cheese. Cover. Cook for about 5 minutes, without stirring until egg is set. Remove to large serving plate. Cuts into 6 wedges.
