Breakfast in an oven

1 pkg bacon
6-8 eggs, beaten
1 onion
1 pepper (optional)
TOPPING:
salsa (optional)
1 cup shredded cheddar cheese

Cut bacon into chunks and place in bottom of warmed, but not hot, Dutch oven. Pour other ingredients in (not topping) and place Dutch oven over hot coals. Cover for a few minutes. Uncover and mix together. Cook to desired consistency. Serve with cheese and salsa on top.
