Iron skillet apple pie

1 1/4 cup sugar
1/4 cup all purpose flour
1 tsp cinnamon
1/4 tsp ground nutmeg
1/8 tsp salt
3 Tbsp melted butter
7 cups peeled, cored and thinly sliced cooking apples
PASTRY:
2 1/2 cup all purpose flour
1/2 tsp salt
1/4 cup lard
1/2 cup butter cut into small pieces
6-8 Tbsp cold water

Combine first 6 ingredients in a large mixing bowl, mixing well. Add apples and toss gently. Roll half of pastry to 1/8 inch thickness on a lightly floured surface; fit into a 10 inch cast iron skillet. Spoon filling into pastry shell. Roll rest of pastry and cut into 3/4 inch wide strips and arrange in a lattice patters over the filling. Seal edges to side of skillet. Bake at 400 F for 40 minutes or until crust is a golden brown. For the pastry: Combine flour and salt; cut in lard and butter until mix resembles coarse meal. Sprinkle water evenly over mix; stir gently with a fork until mixture forms a ball. Chill 30 minutes. Yield pastry for one 10 inch double crust pie.
