Carrot Cake

2 cup sugar
4 eggs
1 1/2 cup oil
2 tsp baking soda
2 tsp cinnamon
3 1/2 cup grated carrots
1 1/2 cup chopped walnuts

Combine sugar, oil and eggs. Beat at medium speed for 2 minutes. Add sifted dry ingredients (flour, baking soda and cinnamon). Beat at low speed until blended. Beat in grated carrots. Add chopped nuts. Pour batter into lightly greased and floured tube pan. Heat oven to 300 F and bake for 1 hour.
