Serves 6
1 Tbsp salt
1/2 cup evaporated milk
1/2 cup water
1/2 cup cracker or corn meal
4 lbs fried catfish
Combine milk and water. Mix in salt until dissolved. Dip fish in mixture and roll in cracker meal. Bake on greased cookie sheet at 500 F for 15 minutes. Garnish with lemon slics.
