Cheesy Potatoes

1 onion
1 lb velveeta cheese
6-8 large potatoes
salt and pepper to taste

In a 9x13 inch pan cover the bottom with water. Place peeled on sliced potatoes in pan. Cover with sliced onion, salt and pepper to taste. Cover and bake at 400 F until fork tender. Add the velveeta cheese on top. Return to the oven for a few minutes to melt the cheese.
