Chinese style chicken

Serves 6
4 chicken breast fillets, cut into thin strips
2 Tbsp oil
3/4 cup each slivered celery, green pepper and carrot
1/2 cup chicken broth
1/4 cup soy sauce
1 small clove of garlic, chopped
1/4 tsp ginger
2 Tbsp cornstarch
2 Tbsp parsley flakes
juice on 1/2 lemon
1/2 tsp salt
Stir fry chicken in oil in wok over high heat for 3 minutes. Add vegetables. Stir fry for 3 minutes longer. Mix remaining ingredients in small bowl. Pour over chicken and vegetables. Bring to a boil. Cook for 2 minutes longer, stirring constantly. Serve over rice.
