Island style chicken

Serves 4
2 lb chicken pieces
2 Tbsp oil
1 (8 oz) can pineapple chunks
1 can chicken broth
1/2 cup vinegar
1 tsp soy sauce
1 large clove of garlic, minced
1 medium green pepper, chopped
3 Tbsp cornstarch
1/4 cup water
Brown chicken in oil in skillet; drain. Drain pineapple, reserving juice. Combine chicken, reserved juice, broth, vinegar, soy sauce and garlic in skillet. Cook, covered, over low heat for 40 minutes. Add pineapple and green pepper. Cook for 5 minutes, stirring occasionally. Blend cornstarch with water. Stir into skillet. Cook until thickened, stirring constantly. Serve with rice.
