Crunchy deviled chicken

Serves 4
1 tsp dry mustard
1 Tbsp water
1 egg, beaten
1 1/2 tsp seasoned salt
1 tsp parsley flakes
pepper to taste
1 fryer, cut up
1 to 1 1/2 cup potato flakes
3 Tbsp butter, melted
Blend mustard with water in bowl. Let stand for 10 minutes. Add egg, seasoned salt, parsley flakes and pepper; mix lightly. Dip chicken into egg mixture. Roll in potato flakes, coating generously. Arrange skin side down in melted butter in baking dish. Bake at 400 F for 40-50 minutes or until tender, turning once.
