Serves 2

1 1/4 lb chicken pieces
1/2 tsp garlic salt
1/2 tsp paprika
8 oz onions, chopped
2 medium green peppers, chopped
3/4 tsp garlic powder
2 cans canned tomatoes
1/2 cup tomato paste
1 Tbsp parsley flakes
artificial sweetener to equal 2 tsp sugar
1 tsp thyme
1 tsp curry powder
1 tsp sherry extract
1/4 tsp pepper
1 cup cooked rice

Season chicken with garlic salt and paprika. Brown in nonstick skillet over medium heat. Remove chicken. Add onions, green peppers and garlic powder. Stir fry for 4 minutes. Add tomatoes, tomato paste, parsley and seasonings; mix well. Add chicken. Cook, covered, for 40 minutes or until chicken is tender. Serve over hot rice.
