Green Pepper steak

Serves 4
1 lb round steak, partially frozen
1/4 cu reduced sodium soy sauce
1 Tbsp cornstarch
1/2 tsp sugar
1/4 tsp ginger
2 Tbsp oil
3 medium green peppers, cut into 1 inch pieces
1 clove of garlic, minced
1/4 cup water
2 small tomatoes, cut into wedges
Slice steak diagonally cross grain into thin strips. Place in shallow bowl. Blend soy sauce into mixture of cornstarch, sugar and ginger in bowl. Pour over steak; mix well. Stir fry steak 1/3 at a time in hot oil in skillet until brown. Remove with slotted spoon when brown. Reduce heat. Add green peppers, garlic and water. Cook for 5 minutes or until peppers are tender crisp. Add steak and tomatoes. Cook until heated through, stirring constantly. Spoon onto serving plate.
