Fajitas

1 lb top round steak, cut into thin strips
3 Tbsp red wine vinegar
3 Tbsp oil
1 tsp garlic salt
1/2 tsp cumin
12 (6 inch) flour tortillas
Juice of 1/2 lime

Combine steak strips with vinegar, oil, garlic salt and cumin in bowl; mix well. Marinate for 20 minutes or longer. Wrap tortillas in damp cloth. Warm in 350 F oven for 10-15 minutes. Drain steak strips. Stir fry in skillet for 1-2 minutes or until tender. Sprinkle with lime juice. Spoon onto warm tortillas. Top with Guacamole and Picante sauce. Roll to enclose filling.
GUACAMOLE:
2 medium avocados, mashed
1 Tbsp mayonnaise
juice of 1/2 lemon
3/4 tsp seasoned salt
Combine all ingredients in bowl; mix until smooth. Makes 32 Tbsps.
PICANTE SAUCE:
1 (16 oz) can stewed tomatoes
1 small onion, chopped
1 Tbsp chopped jalapeno pepper
1 Tbsp garlic powder
1 tsp salt
1/2 tsp sugar
6 cilantro leaves
1 Tbsp cider vinegar
Process all ingredients in blender container for 30 seconds or until smooth. Store in covered container in refrigerator. Makes 50 Tbsps.
