Serves 4

1/2 lb beef round steak
1 Tbsp cornstarch
1 Tbsp soy sauce
1 tsp sugar
2 tsp minced gingerroot
1 clove of garlic, minced
1 Tbsp peanut oil
1 lb broccoli, chopped
1 onion, chopped
2 carrots, diagonally sliced
2 Tbsp peanut oil
3/4 oz cashews
1 Tbsp cornstarch
3 Tbsp soy sauce
1/2 cup water

Slice beef cross grain into thin slices. Marinate in mixture of 1 Tbsp cornstarch, 1 Tbsp soy sauce, sugar, gingerroot, and garlic for 15 minutes. Stir fry beef in 1 Tbsp hot oil in wok for 1 minute; remove beef. Stir fry broccoli, onion and carrots in 2 Tbsp oil for 4 minutes or until tender crisp. Add beef, cashews and mixture of 1 Tbsp soy sauce and water. Cook until thickened, stirring constantly. Serve over rice.
