Sugar Free Apple Pie

Serves 6

1 Tbsp cornstarch
1 (6 oz) can frozen apple juice concentrate, thawed
6 cups sliced peeled apples
1 recipe 2 crust pie pastry
1 tsp cinnamon
1/2 tsp nutmeg

Dissolve cornstarch in 1/4 cup apple juice in small bowl. Combine with remaining apple juice in saucepan. Cook over medium heat until thickened, stirring constantly. Stir in apples, coating well. Spoon into pastry lined 9 inch pie plate. Sprinkle with spices. Top with remaining pastry; trim edge and cut vents. Bake at 375 F for 50-60 minutes or until brown.
