Chocolate banana bread

Serves 16

1/2 cup hard margarine (or butter), softened
2/3 cup granulated sugar
2 large eggs
1 cup mashed banana (about 3 medium)
1 tsp vanilla
2 cups all purpose flour
1/2 cup mini semi-sweet chocolate chips
1/2 cup chopped walnuts (optional)
2 Tbsp cocoa, sifted if lumpy
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Cream margarine and sugar in large bowl. Add eggs 1 at a time, beating well after each addition. Add banana and vanilla .
Combine remaining 7 ingredients in medium bowl. Add to banana mixture. Stir until just moistened. Spread evenly in greased 9x5x3 inch loaf pan. Bake in 350 oven for about 1 hour until wooden pick inserted in center comes out clean. Let stand in pan for 10 minutes before removing to wire rack to cool.

This is a very thick batter. It took closer to 1 hour and 30 minutes. It is a very moist bread.

I used semi-sweet chips and dark chocolate chunks instead of the mini chips.

I also dusted the pan after I sprayed it with some cocoa and white sugar before pouring the batter into the pan.
