Coconut cranberry muffins

Category: potluck

Makes 12 muffins

2 cups all purpose flour
1/3 cup chopped pecans
1/4 cup medium unsweetened coconut
1 Tbsp baking powder
1 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp salt
2 large eggs
1 cup buttermilk (or reconstituted from powder)
2/3 cup granulated sugar
1/2 cup dried cranberries
1/3 cup cooking oil

Combine first 7 ingredients in large bowl. Make well in center.
Beat eggs in medium bowl until frothy. Add remaining 4 ingredients. Mix until smooth. Add to well. Stir until just moistened. Fill 12 greased muffin cups 3/4 full. Bake at 400 F for 15-18 minutes until wooden pick inserted in center of muffin comes out clean. Let stand in pan for 5 minutes before removing to wire rack to cool.
