Polynesian Meatballs
Category: potluck
Serves 8 (Makes 78 meatballs)
Makes 1 cup apricot sauce
8 oz can of water chestnuts, drained and finely chopped
3 Tbsp soy sauce
1 Tbsp brown sugar, packed (or granulated sugar)
2 garlic cloves, minced (or 1/2 tsp powder)
1 tsp parsley flakes
1/2 tsp onion powder
2 lbs lean ground beef
APRICOT SAUCE:
1 cup apricot jam
3 Tbsp apple cider vinegar
1/4 tsp paprika
Combine first 6 ingredients in large bowl.
Add ground beef. Mix well. Roll into 1 inch balls. Arrange in single layer in ungreased baking sheet with sides. Bake at 375 F oven for about 15 minutes until meatballs are no longer pink inside.
APRICOT SAUCE: Combine jam, vinegar and paprika in small bowl. Serve with meatballs.
