Sugar cookies

Makes 60 cookies- 2 inches

2 eggs
2/3 cup Wesson oil
2 tsp vanilla
1 tsp grated lemon peel
3/4 cup sugar
2 cups sifted all purpose flour
2 tsp baking powder
1/2 tsp salt

Preheat oven to 400 F. Beat eggs with fork; stir in Wesson oil, vanilla and lemon. Blend in sugar, reserve one Tbsp. Sift together flour, baking powder, salt and add to egg. Drop by tsp a full 2 inches apart on ungreased cookie sheet. Stamp each cookie flat with bottom of glass, then dip in reserved sugar and continue dipping in sugar. Bake 8-10 minutes. Remove at once from cookie sheet. If baking cookies one sheet at a time, stir mixture between batches.
