Boiled Custard

Makes 1 quart

4 eggs or 7 egg yolks and 1 egg
1 cup sugar
1 quart milk

Heat eggs and add sugar. Scald milk and add to eggs and sugar. Cook in double boiler until it coats a spoon. Set pan in pan of cool water to stop cooking and avoid curdling.
