Bananas Flambe'

Serves 2

4 firm ripe bananas
1/4 cu butter
1/2 cup light brown sugar, firmly packed
1/2 tsp ground cinnamon
1/2 cup rum or 1 Tbsp rum extract
vanilla ice cream

Peel bananas, cut in half crosswise. Then cut each piece in half lengthwise; set aside. Combine butter, brown sugar and cinnamon in flambe pan or skillet, heat, stirring constantly over low flame until mixture becomes a smooth syrup. Add banana pieces and baste them with syrup for 3-4 minutes. Remove from heat. In a small pan carefully heat rum just until warm. (Don't heat rum extract). Pour over bananas and carefully light with a match (using a long handle spoon), baste bananas with sauce until flames die. Serve over ice cream.
