Banana Split pudding

Serves 6
Ready in 47 minutes

2/3 cup sugar
2 Tbsp cornstarch
1/4 tsp salt
2 cups milk
2 egg yolks
2 Tbsp butter
1 tsp pure vanilla extract
1-2 bananas
1/4 cup fudne topping
optional: whipped topping, chopped pecans, cherries

Mix sugar, cornstarch and salt in a large microwaveable bowl. Whisk in milk and egg yolks until well blended.
Microwave on high for about 5-7 minutes, stirring every 1-2 minutes. Cook until pudding is thick and has boiled at least 1 minute. Remove from microwave. Stir in butter and vanilla. Cover surface with plastic wrap.
Chill 30 minutes.
Layer pudding with bananas and fudge topping in individual clear serving bowls. Garnish with whipped topping, chopped pecans and cherries, if desired.
