Cracker Pie

Serves 8

3 eggs whites
1/2 tsp cream of tartar
1/2 tsp baking powder
1 cup sugar
1 tsp vanilla
16 crackers, crushed
1 cup chopped pecans
1 cup whipping cream
2 Tbsp pineapple preserves
coconut

Beat egg whites until foamy and add cream of tartar; beat until still. Add baking powder, sugar and vanilla. Fold in crumbs and nuts. Spread into 9 inch greased pie pan and spread up around sides of pan. Bake 35 minutes at 325 F. Cool.
TOPPING: Whip cream and add preserves. Spread on pie and sprinkle with coconut.
