Best Yet Caramel Icing

3 cups granulated sugar
2 cups heavy cream
1/2 stick butter
1 Tbsp vanilla

Mix first three ingredients well and boil until they reach the soft ball stage. Add vanilla. Allow to cool slightly and beat until creamy. To insure against grainy icing, butter the saucepan first and add 1/4 cup white corn syrup.
