Pumpkin Roll

3 eggs
1 cup sugar
2/3 cup pumpkin
1 tsp lemon juice
3/4 cup plain flour
1 tsp baking powder
3/4 cup chopped nuts
1/2 cup powdered sugar
FILLING:
1 cup powdered sugar
6 oz cream cheese
4 Tbsp butter
1/2 tsp vanilla
1/2 cup nuts, chopped
Beat eggs well; add sugar. Add lemon juice to pumpkin, (if using fresh pumpkin add 1 tsp ginger, 1/2 tsp nutmeg and 1/2 tsp salt). Fold dry ingredients into pumpkin, then egg mixture. Grease a 15x10 inch cookie sheet well. Spread mixture on cookie sheet, sprinkle 3/4 cup chopped nuts on cake. Bake 375 F for 15 minutes. Turn out on tea towel sprinkled with 1/2 cup powdered sugar. Roll up from short end while warm and let cool.
FILLING: Unroll cake, fill and roll back up. Sprinkle with powdered sugar.
