Birthday Cake

3 layers or 2 layers and 12 cup cakes

3 cups white sugar
1 cup shortening
1 1/2 cup buttermilk
1/2 tsp soda
10 egg whites, stiffly beaten
1/2 tsp cream of tartar
1 tsp vanilla
1 tsp almond
1 tsp lemon
4 cups sifted flour

Combine sugar and shortening and beat well. Combine buttermilk and soda then add to above mixture. Add remaining ingredients and mix well. Bake approximately 40 minutes in layer pans or 1 hour in large tube pan.
