Sweet and sour pork chops

8 (3/4 inch) pork pork chops
1 tsp salt
1/4 tsp pepper
8 slices pineapple
1 large green pepper, sliced
3/4 cup sweet pickle juice
1/3 cup ketchup
1/4 cup pineapple juice
1 Tbsp prepared mustard
1 Tbsp soy sauce
1/4 tsp ground ginger
1/3 cup plum preserves

Trim fat from chops and place in a 13x9x2 inch baking dish. Sprinkle with salt and pepper. Place pineapple and green pepper over chops. Combine remaining ingredients and pour over top. Cover and bake at 325 F for 45 minutes. Remove cover and bake at 400 F for 30 minutes or until top is brown.
