Chicken noodle casserole

1 (4 lb) hen
1 stick oleo
1 cup bell pepper, chopped
1 cup celery, chopped
1 cup onion, chopped
1/2 lb processed cheese, Velveeta, grated
6 oz jar stuffed olives
6 oz can sliced mushrooms, drained
1 pkg spinach noodles
4 cups chicken stock
1 can mushroom soup

Boil hen in seasoned water (light salt). Be sure to have 4 cups stock. Bone chicken and cut in large pieces. Saute vegetables in oleo; stir in cheese and chicken. Boil noodles in 3 cups stock (30 minutes or until stock absorbs); add soup to noodles and mix with other ingredients and serve hot. Can be made ahead and reheated. Cook at 300 F for 45 minutes (30 minutes for a shallow dish). Add more stock if needed.
