Southern fried chicken

1 broiler fryer chicken, cut up
1/2 cup milk
1 egg
1 cup all purpose flour
vegetable oil

Wash chicken, salt and let set for several hours. Drain thoroughly. Beat milk and egg in shallow bowl; place flour in paper or plastic bag. Dip chicken pieces in egg mixture and then shake in flour to coat thoroughly. Pour oil into large skillet to a depth of 1/2 to 1 inch. Heat oil over moderately high heat (375 F in an electric skillet). Place chicken pieces, skin side down in hot oil and cook with lid on for 20 minutes, turn and cook 25 minutes. Drain chicken on paper towels. You may need to add more flour to bag to coat chicken thoroughly.
