Oven fried chicken

4- 2 1/2 lb chicken cut in half
2 Tbsp salt
freshly ground black pepper
8 Tbsp unsalted butter cut into bits
2 Tbsp paprika
Preheat oven to 400 F. Wash chicken under cold running water and pat dry with paper towels. Sprinkle pieces on all sides with salt, pepper and paprika. Spread pieces out in 1 layer in shallow pan; scatter half of butter evenly over chicken and cover pan securely with aluminum foil. Bake in center oven for 20 minutes; remove foil and raise temperature to 450 F and bake 30 minutes longer. Turn over with tongs, sprinkle remaining butter and bake an additional 30 minutes. Serve hot or room temperature.
