London broil

Serves 4-5

1 1/2 lbs beef flank steak
1 cup salad oil
1 Tbsp vinegar
1 small clove garlic, minced
salt and pepper

Score flank steak, place in shallow pan. Combine salad oil, vinegar and minced garlic. Pour over steak. Cover, let stand at room temperature 2-3 hours. Turn several times.
Broil 3 inches from heat about 5 minutes. Season with salt and pepper. Turn, broil 5 minutes more (medium rare). Season. To serve, carve in very thin sliced diagonally across grain.
