Mexican rice

2 Tbsp fat
1 cup raw rice
1 small onion, minced
1/2 green pepper, chopped
1 clove garlic, minced
2 tsp salt
1 cup chopped (peeled) tomato or canned
2 cups chicken broth

Wash rice well and dry; brown raw rice on hot fat. Add onion, clove garlic, green pepper, salt and tomatoes. Mix well and add broth. Cover with lid and allow rice to simmer until tender, about 40 minutes. Remove lid to allow mixture to dry out. Do not stir after cooking starts. Serve pieces of chicken on top of each serving of rice.
