Charlene's Recipe

Herbed tomatoes

Serves 8-12

8 ripe tomatoes, peeled and cut into eighths
1 1/4 tsp salt
1/4 tsp pepper
3/4 tsp dried leaf thyme
1/3 cup minced fresh parsley
1/2 cup minced green onions with tops
3/4 cup salad oil
1/2 cup terragon vinegar

Sprinkle with seasonings. Combine oil and vinegar and pour over tomatoes and seasonings. Cover and chill overnight, basting several times.
