Cole slaw

Serves 3-4

2 cups shredded cabbage
1/4 cup chopped parsley
1 medium onion sliced thin (red onions best)
DRESSING:
3 Tbsp sugar
1 tsp salt
3 Tbsp vinegar
2 Tbsp oil

Combine and marinate several hours.
DRESSING: Mix until sugar dissolves then pour over cabbage mixture. Volume reduces about 1 half.
