Serves 4-6

1 cup cornmeal
1 Tbsp shortening
1 tsp salt
1 cup boiling water
2 cups milk
2 eggs
3 tsp baking powder

Mix salt with cornmeal, cut in shortening, slowly pour in boiling water, stirring as you pour. Beat eggs in the milk to blend well, and stir in, then add baking powder and blend all ingredients well. Grease casserole and pour in ingredients. Bake at 350 F for 30 minutes or until browned on top. While baking it should be stirred 2-3 times before ingredients congeal. Serve hot from casserole.
