Good southern biscuits

Makes 2 dozen large thick biscuits

2 cups sifted flour
3/4 tsp salt
1 Tbsp baking powder
1/4 cup lard
1/4 tsp baking soda
1 cup buttermilk

Sift flour, salt and baking powder. Work as lard with fingertips. Mix the baking soda with the buttermilk and add to the flour mixture. Blend lightly. Toss on a heavily floured pastry board and knead until soft and spongy. Roll lightly to 1/2 inch thickness and cut into rounds. Place on well buttered pan. Bake at 450 F to 500 F for 10-12 minutes.
