1 cup oatmeal (instant quick cooking)
1 cup buttermilk (pour over oats. Let stand 1 hour)
1 egg
1/2 cup brown sugar
1/2 cup Wesson oil
1 cup flour
1/2 tsp salt
1 tsp baking powder
1/2 tsp soda
Beat eggs; add sugar; then oats and buttermilk and then remaining ingredients. Bake at 400 F in greased muffin tins 15-20 minutes.
