Onion soup

2 large yellow onions
4 Tbsp butter
1 tsp finely minced garlic
2 Tbsp flour
5 cups beef broth
3 cups water
1 bay leaf
salt and pepper
1 cup dry white wine
12 thin slices french bread
1/2 lb gruyere cheese, grated

Peel onions and slice thinly. Heat butter in deep casserole and add garlic and onions. Cook, stirring often about 15 minutes. Sprinkle with flour and stir. Add broth and water, seasonings and wine. Cook 30 minutes. Bake bread at 400 F. Put some soup in crocks. Put in 2 slices bread and sprinkle with cheese. Put crocks on baking pan and bake for 30 minutes.
