Serves 12
vegetable oil spray
1 (7.6 oz) pkg banana muffin mix
2/3 cup fat free milk
4 oz baby food pureed sweet potatoes
1/2 tsp ground cinnamon
1/2 tsp vanilla, butter and nut flavoring or vanilla extract
Preheat oven to 425 F. Lightly spray a 12 cup nonstick mini muffin pan with vegetable oil spray.
In a medium bowl, stir together muffin mix, sweet potatoes, cinnamon, and flavoring until just moistened. Do not overmix. Spoon into muffin pan.
Bake for 15 minutes or until a cake tester or wooden toothpick inserted in center comes out almost clean. Muffins will continue to cook while cooling. Let cool on a cooling rack for 5 minutes before removing from pan.
