Lemony Sunrise Parfait

Serves 4
1 1/2 cup fat free or low fat plain yogurt
1/3 cup confectioners sugar
2 tsp grated lemon or orange zest
2 Tbsp fresh lemon juice or orange juice
3/4 tsp vanilla extract
1 cup fat free or low fat granola
2 cups blueberries and quartered strawberries
In a medium bowl, whisk together yogurt, confectioners sugar, lemon zest, lemon juice and vanilla until confectioners sugar is completely dissolved.
Spoon 2 Tbsp granola, 1/4 cup berries, and about 1/2 cup yogurt mixture into each wine goblet or parfait glasses. Top with remaining 2 Tbsp granola and 1/4 cup fruit. Serve immediately.
