Roasted Green beans and onions
Category: for the heart
Serves 4
Vegetable oil spray
12 oz fresh green beans, trimmed
1 medium yellow onion (about 4 oz) cut into 1/4 inch wedges
2 tsp olive oil
1 tsp Dijon mustard
1/2 tsp dried terragon, crumbled
1/4 tsp salt
1/8 tsp dried red pepper flaked (optional)
2 Tbsp finely snipped fresh parsley
Preheat oven to 425 F.
Line a baking sheet with aluminum foil. Lightly spray foil with vegetable oil spray. Place beans (be sure they are very dry) and onion wedges in a single layer on foil. Liberally spray vegetables with vegetable oil spray.
Roast for 10 minutes. Stir. Roast for 8 minutes or until vegetables begin to brown.
Meanwhile, in a small bowl, stir together the remaining ingredients, except parsley.
To serve, drizzle oil mixture over vegetables. Stir gently to coat. Sprinkle with parsley.
