Turkey Breast with Mexican Rub

Serves 8: 3 oz turkey per serving

Vegetable oil spray
RUB:
1 tsp chili powder
1/2 tsp ground cumin
1/2 tsp dried oregano, crumbled
1/4 tsp garlic powder
1/4 tsp black pepper
1/8 tsp cayenne

1 (3 lb) whole turkey breast with skin and bone, gravy packet and all visible fat discarded

Preheat oven to 325 F. Lightly spray a baking sheet with vegetable oil spray.
In a small bowl, combine rub ingredients.
Pat turkey dry with paper towels so rub will adhere well. Place turkey on baking sheet. Gently separate skin from breast, leaving skin attached at one end. Sprinkle rub over turkey flesh, pressing gently so mixture stick to flesh. Carefully pull skin over flesh to cover.
Bake for 1 hour 10 minutes or until turkey is no longer pink in center and internal temperature reaches 170 F. Remove turkey from oven and let stand for 15 minutes. Discard skin before slicing turkey.
