Serves 4: 1 chicken breast half and 1 /4 cup salsa per serving
vegetable oil spray
4 boneless, skinless chicken breast halves (about 4 oz each), visible fat discarded
1/ 2 tsp ground cumin
1 (4 oz) can chopped mild or hot green chilies, rinsed and drained, if desired
1 /2 cup fat free or part skim milk shredded mozzarella cheese
QUICK SALSA
1 cup diced tomatoes
2 Tbsp snipped fresh cilantro
1 /4 tsp grated lime zest
1 Tbsp lime juice
1 /4 tsp salt
Preheat oven to 400 F. Lightly spray a nonstick baking sheet with vegetable oil spray.
Place chicken in a single layer on baking sheet. Top each piece with cumin, then chilies, then mozzarella.
Bake for 20 minutes or until no longer pink in center. Transfer to plates.
To serves, spoon salsa over chicken.
