Serves 6-8

1/ 2 cup butter, melted and divided
1 onion, chopped
1 green pepper, chopped
1 red pepper, chopped
3 eggs
1 cup sour cream
15 1/ 4 oz can creamed corn
1/ 3 cup yellow cornmeal
1/ 4 tsp salt
1/ 4 tsp pepper
1 cup shredded Cheddar cheese

Combine 2 Tbsp butter, onion and peppers in a pan; cook over medium heat until softened. Remove from heat. In a separate bowl, combine remaining butter, eggs and sour cream; whisk together until smooth. Mix in corn, cornmeal, salt and pepper; stir in cheese and onion mixture. Place in a greased 13x9 inch baking pan. Bake at 350 F for 40-45 minutes until firm.
